    Makes: 12 Yorkshire puddings

    • 220g plain flour
    • ground black pepper, to taste
    • 1 teaspoon salt
    • 4 eggs, lightly beaten
    • 275ml milk
    • 6 teaspoons beef dripping

    1. Preheat the oven to 270 C / Gas 10 (if your oven does not go this high, place it on 250 C / Gas 9).
    2. Sift flour, pepper and salt in to a large bowl and add the beaten eggs and half the milk, whisk until it resembles wallpaper paste (needs to be very smooth), then add the rest of the milk and whisk again till smooth. Let it rest for 30 minutes, you can speed this up by placing in the fridge for 10 minutes.
    3. Into a 12 hole muffin tin, place 1/2 teaspoon beef dripping into each hole.
    4. Place the muffin tin and beef dripping into the oven to get very hot. Once hot, remove from the oven and spoon in enough batter to come halfway up the sides of each hole.
    5. Bake in the oven for 20 minutes until risen and golden brown. Remove from the oven and serve.
