Warm the oil in a frying pan over a medium heat then add the onion and garlic and cook and stir for 5 minutes.
Add the meat and brown on all sides. Stir in the apple, sultanas, curry powder and ginger, and cook for 5 minutes. Pour in the water and tomato puree. Bring to boil, then simmer and cover to cook for 30 minutes until the beef is tender and the sauce has thickened. Serve hot in warmed bowls over rice.
*Serve with rice and salad.
*Add extra vegetables such as mushrooms,peas and pepper.
