Charred tomato salsa

    This is a super easy salsa. The blackened, blistered skin of the tomatoes gives it amazing flavour.

    Serves: 6 

    • 4 to 5 medium tomatoes, cored
    • 1/2 large white onion
    • 1 to 2 jalapeno peppers, halved and seeded
    • 2 large garlic cloves
    • juice from 1/2 lime, or more to taste
    • 1 bunch fresh coriander, stems trimmed
    • salt, to taste

    1. Preheat the grill and line a baking tray with foil.
    2. Core the tomatoes and cut the onion into 4 pieces.
    3. Place tomatoes, onion and peppers onto the prepared baking tray.
    4. Grill turning halfway through, until blistered, 12 to 15 minutes. Remove from the grill and allow to cool.
    5. Transfer charred vegetables to a food processor. Add garlic, lime juice and coriander, and pulse until a chunky puree forms. Season with salt and more lime juice, if desired. Cover and chill.


    Salsa can be made 3 days ahead and stored in an airtight container in the fridge.
