About this recipe: Whether as a side dish or main dish, this is a great kid-friendly recipe that goes great with many dishes, including pasta, hot dogs, burgers, salad and more!

Serves: 2 

  • 1 onion, chopped
  • 2 red or yellow peppers, seeded and chopped
  • 1 courgette, sliced
  • 2 tablespoons olive oil
  • 1 (200g) tin Vienna sausages, sliced
  • 1 tablespoon chopped garlic

  1. In a large frying pan over a medium heat, warm the oil then add all of the ingredients except the garlic and cook and stir for 5 minutes. Add the garlic and cook and stir for a further 3 to 4 minutes. Spoon onto warm plates and serve.

Vienna sausage

Tinned Vienna sausage may not be available in your local shops, try searching online or in speciality shops. Substitute with 100g to 150g packed Vienna sausage or standard hot dogs, sliced.
