The tastiest lasagne ever

    This lasagne will make your taste buds tingle! It is a winner every single time and so easy to make. I kind of taught myself how to cook as I moved out at 18. Over the years I have gotten quite good at it and this is my favourite thing to make.

    Serves: 4 

    • oil, as needed for cooking
    • 1 green pepper, seeded and diced
    • 1 red pepper, seeded and diced
    • 1 to 2 handfuls mushrooms, diced
    • 3 large cloves garlic, crushed and diced
    • 2 onions, diced
    • salt and pepper, to taste
    • dried basil, to taste
    • 300g beef mince
    • 1 (500g) jar tomato lasagne sauce
    • 2 splashes ruby port (my secret ingredient!)
    • 1 (500g) jar white lasagne sauce
    • 1 packet lasagne sheets
    • 300g Cheddar cheese, grated
    • 50g to100g fresh mozzarella cheese, sliced

    1. Preheat the oven to 180 C / 160 C fan / Gas 4.
    2. Warm a little oil in a large frying pan over a medium heat. Add the diced peppers, mushrooms, garlic and onions, season and cook on a low heat for about 5 to 8 minutes occasionally stirring. Add the basil whilst you are stirring and get it all infused together.
    3. Add your beef mince into the frying pan gradually breaking it apart with a wooden spoon and making sure to season with black pepper every time you add a bit more meat in. Stir the mixture together and turn the heat up slightly and continue to stir regularly until the meat is well browned.
    4. Turn the heat down slightly and add your tomato sauce to the mixture. Leave that to simmer on a low heat for 8 to 10 minutes until it is heated right through. Add plenty of basil at this point to enhance the flavour. Now comes in the secret weapon, well I call it a secret weapon because it makes your mixture explode with flavour, add 2 splashes of port and stir regularly until mixture is heated right through and everything is blended nicely. In a separate saucepan, warm the lasagne white sauce.
    5. Now you need a nice deep dish for your lasagne; a ceramic one or an ovenproof pyrex one should be fine. Begin with a layer of the beef mixture on the bottom, then add a layer of lasagne sheets, followed by a layer of white sauce then a layer of pasta sheets. Continue to layer like this until the ingredients are used up, finishing with the white sauce on top. Add the grated Cheddar and mozzarella.
    6. Bake in the preheated oven for 25 to 30 minutes, or until piping hot throughout and the cheese is nice and golden on top. Remove from the oven and allow to stand for 10 to 15 minutes before serving as it does not cut so well when piping hot. Voila!

    Made this for tea tonight and my boyfriend kept saying mmm! I tweaked the quantities a bit to make a smaller sized lasagne and didn't put any mushrooms in because I don't like them but mmm sure was good. Thanks for the recipe!  -  01 Aug 2015
