Banana cookies

    These tasty banana cookies are perfect for a small treat. Vary the recipe by substituting chocolate chips with raisins and adding some desiccated coconut.

    Makes: 24 banana cookies

    • 280g plain flour
    • 2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 1/4 teaspoon bicarbonate of soda
    • 170g chocolate chips or 145g raisins (optional)
    • 1 to 2 tablespoons desiccated coconut (optional)
    • 150g margarine
    • 2 eggs
    • 1 teaspoon vanilla extract
    • 225g mashed banana

    1. Preheat the oven to 160 C / Gas 2/3. Line two baking trays with baking parchment.
    2. In a bowl combine the flour, baking powder, salt, bicarb, chocolate chips (or raisins) and coconut, if using, and mix well. Add the remaining ingredients and mix well, the mixture should be quite sticky. Using teaspoons, place blobs of the mixture on the prepared baking trays, allowing room for spreading.
    3. Bake in the preheated oven for 13 to 15 minutes until golden brown and firm. Remove from the oven and allow to cool for a few minutes on the baking trays before transferring to a cooling rack to cool completely. Serve.
