Preheat the oven to 160 C / Gas 2/3. Line two baking trays with baking parchment.
In a bowl combine the flour, baking powder, salt, bicarb, chocolate chips (or raisins) and coconut, if using, and mix well. Add the remaining ingredients and mix well, the mixture should be quite sticky. Using teaspoons, place blobs of the mixture on the prepared baking trays, allowing room for spreading.
Bake in the preheated oven for 13 to 15 minutes until golden brown and firm. Remove from the oven and allow to cool for a few minutes on the baking trays before transferring to a cooling rack to cool completely. Serve.
