Method Prep:10min › Cook:35min › Ready in:45min
Warm a little oil in a frying pan over a medium heat. Add the onion and garlic and cook and stir until soft and just browning, about 4 to 6 minutes.
In a saucepan, combine the chopped tomatoes, passata, tomato puree, salt, pepper then add the onion and garlic. Simmer gently, uncovered, for 15 minutes.
Once the pizza sauce has been bubbling away for 15 minutes it's time to add some herbs; oregano and basil are a great match for tomato so throw those in. Sprinkle in the sugar, then turn the heat down to low and cook for a further 5 minutes, or until to desired thickness.
Once your happy with it, use on pizza or transfer to a suitable container. You can use the pizza sauce right away, store in the fridge or even freeze it. It also makes a great sauce for anything else such as pasta, sandwiches, and for dipping.
