Put the spring onions, garlic, parsley and olive oil into a food processor and ‘whiz’ until you have the desired consistency. I left the parsley a bit bigger simply to look nice in the dressing!
Either add the rest of the ingredients into the processor or add it to the food mixer with the whisk attachment and combine. Transfer to a serving dish then let the flavours come together in the fridge for at least 10 minutes before serving.
I find this dressing can get runny quite quickly so I recommend using it within at least 2 days of making.
