In a shallow dish mix the vegetable oil, zest and juice of the lime and the garam masala together. Put the chicken breasts in the dish and spoon over the marinade making sure they are completely covered. Cover and put the dish in the fridge for at least 30 minutes or longer if you have the time.
Preheat the oven to 190 C / Gas 5.
Remove the chicken from the fridge and wrap in a loose tin foil parcel.
Bake in the preheated oven for about 25 minutes or until the chicken is no longer pink in the centre. Remove from the oven and serve with jasmine rice or salad.
If serving with rice pour the marinade/sauce from the foil over the chicken on the plate.
If serving with salad I think it is better to just serve the chicken without the marinade/sauce from the foil.
