Easy courgette and cream cheese soup

    This is a lovely creamy soup, very easy and quick to prepare. Courgettes and cream cheese is just about all you need!

    Serves: 2 

    • 6 large courgettes
    • 200g cream cheese
    • salt and freshly ground black pepper to taste
    • croutons, to serve (optional)

    1. Wash courgettes and remove ends, then cut into 1/2 inch slices. Place in a pan, cover with water and put to cook until tender.
    2. Once tender strain water into a bowl and leave on one side.
    3. Liquidise the courgettes and add half of the cream cheese, salt and pepper and mix well.
    4. Taste and add any further cheese, salt or pepper according to your liking.
    5. Should the mixture be too thick add some of the strained water to reach the consistency to your liking.
    6. Add croutons, serve and enjoy!! :)


    Please note that the cream cheese can be creamy or light depending on your preference. Also check out my stuffed courgettes as they go amazingly well accompanying this soup.
