Easy tuna pasta

    This tuna pasta is easy to make and feeds two, great for families on a budget. Experiment with different herbs for variations in flavour.

    • 150g to 250g pasta of your choice
    • 1 to 2 teaspoons oil
    • 1 onion, finely chopped
    • 2 tablespoons chopped tomato
    • 1 (120g) tin tuna, drained
    • 1 teaspoon caster sugar
    • mixed dried herbs, to taste (optional)

    1. Bring a saucepan of lightly salted water to the boil over a high heat. Add the pasta and cook according to the instructions on the packet. Once cooked, drain the water but leave the pasta in the saucepan.
    2. In a frying pan heat the oil and add the chopped onions, cooking them until they are beginning to brown. When this happens, bung in the chopped tomatoes, tuna, sugar (and herbs if you like) and combine.
    3. After a couple more minutes add this mixture to the saucepan of cooked pasta and stir to coat the pasta. Finally, pour the saucepan of pasta and sauce into bowls and serve hot.
