Whisk the balsamic vinegar and oil together in a bowl until well combined. Season to taste with salt and pepper.
Place the leaves in a salad bowl then drizzle the lemon juice on top together with the oil and vinegar mix. Toss to coat everything and combine well. Taste and adjust seasoning and lemon juice if and/or as necessary. Sprinkle Parmesan shavings over the top and serve.
use whatever salad leaves you have on hand such as rocket, lamb’s lettuce, romano lettuce, basil leaves etc.
