Double strawberry cheesecake

    This is a very easy recipe for strawberry cheesecake. There is no baking involved and it's ready in 3 1/2 hours. Ideal midweek dessert or for entertaining! My family love it!

    Serves: 6 

    • 50g unsalted butter
    • 200g digestive biscuits
    • 300g cream cheese
    • 300g crème fraiche
    • 100g caster sugar
    • 400g strawberries

    1. Melt butter over low heat in saucepan. Meanwhile crush the biscuits until fine in food processor or put in a freezer bag and bash with rolling pin.
    2. Mix biscuits and butter together and pour into loose bottom cake tin. Press down and put in fridge to set.
    3. Mix together cream cheese, crème fraiche and caster sugar until smooth. Chop half the strawberries into assorted sizes and mix with cheese mixture using a spoon.
    4. Pour on top of biscuit base and smooth down. Decorate the top with the remainder of the strawberries. Chill in fridge for 3 hours or until set and enjoy!
