Chocolate and coconut balls

    These chocolate balls covered in desiccated coconut are deliciously gooey and easy to make! Perfect when you can't be bothered to use the oven.

    Makes: 15 chocolate coconut balls

    • 150g butter, at room temperature
    • 200g caster sugar
    • 1 1/2 tablespoons vanilla extract
    • 4 1/2 tablespoons cocoa powder
    • 350g rolled oats
    • 2 to 3 tablespoons water
    • desiccated coconut

    1. Combine the butter and sugar together in a bowl. Add the vanilla extract and cocoa powder and mix until well integrated. Beat until smooth, preferably with an electric mixer.
    2. Pour in the oats then mix and begin adding the water, a tablespoon at a time until the mixture is pliable and easy to form into balls.
    3. Place some desiccated coconut on a plate and roll the chocolate balls in the coconut. Put them on a plate and eat or you could put them in the fridge to make them harden a little. Enjoy!
