In a small frying pan soften the onions and mushrooms in the butter for about 2 minutes but don't let them brown.
Add the flour and stir to cook out the flour for about 1 minute. Add the mushrooms, cheese and lemon juice, and seasoning then stir in slowly for 2 minutes.
Put the mixture into ramekins and sprinkle with cheese. Put the ramekins under a hot grill until the cheese bubbles, about 30 seconds to 1 minute. Remove from the heat and serve.
Use as a spread, pate or great filler for baked potatoes. Served with a lemon quarter this is a cracking starter at a dinner party. Don't use 'fancy' mushrooms. You don't need to but make sure you cut your mushrooms as small as possible.
