Preheat the oven to 170 C / Gas 3. Grease a baking dish.
For the apples:
Combine the apples, granulated sugar, raisins, water, cinnamon stick and cloves in a saucepan over a medium heat and cook until apples are tender, about 30 minutes.
Once apples are tender remove and discard cinnamon stick and cloves and pour apple mixture into the prepared baking dish.
For the custard:
Melt margarine in small saucepan over a medium heat. Add the flour and stir until all combined. Remove from heat and add milk a little at a time, whisking constantly.
Once milk has been added return to heat until it starts to boil, stirring constantly. Lower the heat and add the 2 egg yolks and the vanilla extract stir continuously for about 5 minutes.
Once custard is ready, pour over the apple mixture and allow to cool.
For the crumble:
Combine margarine and flour in a bowl and rub together until it looks like crumbs. Add the sugar and mixed spice and mix all well together.
Once the custard is cool and set sprinkle the crumbled mixture over.
Bake in the preheated oven for about 30 minutes. Remove from the oven and serve. Equally nice served hot or cold. Enjoy!
