Supreme tartare sauce

    The best and supreme sauce which adds a touch of class to a whole raft of fish and seafood dishes. Once tasted, a staple forever!

    Serves: 4 

    • 1 tablespoon finely chopped capers
    • 2 tablespoons finely chopped gherkins
    • 120g (4 1/2 oz) mayonnaise
    • 1/2 to 1 tablespoon finely chopped flat leaf parsley
    • finely chopped shallots, to taste
    • finely chopped fresh dill, to taste
    • lemon juice, to taste

    1. In a small bowl, mix the capers and gherkins into the mayonnaise. Add the parsley and the other ingredients to taste. Mix well to fully combine all the elements. Taste and adjust if and/or as necessary. Can serve immediately or cover with cling film and chill in the fridge for 30 minutes before serving.
