In a small bowl, mix the capers and gherkins into the mayonnaise. Add the parsley and the other ingredients to taste. Mix well to fully combine all the elements. Taste and adjust if and/or as necessary. Can serve immediately or cover with cling film and chill in the fridge for 30 minutes before serving.
