Joint the ribs, and poach gently in simmering water until tender, about 45 minutes. Drain and set aside.
In a frying pan, very gently sweat the onion and garlic in the oil over a medium heat. When just soft, add remaining ingredients (except the bourbon) and heat through, stirring all the time; do not boil. When all combined, turn off the heat and add the bourbon, stir well.
Preheat the oven to 180 C / Gas 4.
Place ribs in a deep baking dish, cover with sauce making sure all ribs are covered.
Bake in the preheated oven for 20 minutes, or until sauce is sticking to the edge of the tray and bubbling between ribs. Remove from the oven and serve.
The ribs can also be cooked on a BBQ at medium heat for 20 minutes until the sauce is sticking to the ribs.
