Quince strudel with puff pastry

    I learned how to make this quick strudel many years ago and I keep doing it because it is so easy and requires only four ingredients.

    Makes: 10 

    • 1 (375g) packet ready rolled puff pastry
    • 450g quince paste (dulce de membrillo), diced
    • 3 tablespoons strawberry jam
    • icing sugar for dusting

    1. Preheat the oven to 200 C / Gas 6. Grease a baking tray.
    2. On a lightly floured surface, roll out the the puff pastry to a rectangle. Using a sharp knife, mark the rectangle length wise to divide it into 3 equally wide pieces. Make the same number of diagonal cuts on each side, not cutting into the centre.
    3. Distribute the quince paste in the centre and alternate placing the side strips over the filling to make it look like a mock braid.
    4. Warm the strawberry jam and brush the entire surface with it.
    5. Bake in the preheated oven and bake till golden brown, about 20 to 25 minutes. Let cool. Dust with icing sugar before serving.


    Quince paste (Dulce de membrillo) can be found in Spanish and Latin American speciality stores and online.
