Beef stew with parsley dumplings

Warm up on a winter evening with a nourishing beef stew, made extra-satisfying with low-fat, herb dumplings. Try serving with steamed broccoli, or a leafy vegetable such as spring greens or cabbage.

Used different ingredients. my girlfriend and me are not fans of swede so used parsnips instead.... also crumbled in a couple of oxo cubes for a bit more meatiness

Used different ingredients. I didn't add swede instead added sweet potato and celery and used a chicken and veg stock cubes also added lots more herbs, mainly oreganeo, parsley, corriander and thyme also lots of pepper as thought it was a bit bland to my tasting

This was lovely, it's probably the same ingredients I usually use but I followed the recipe instead of just plopping it all in! I'm sure the results were extra special 😉

Delicious and easy to make. A good hearty supper. Used parsnips as no swede available.
