Vanilla meringues

    My kids love small meringues, to eat plain or with dulce de leche, like we do in Argentina. This recipe does not use cream tartar.

    Serves: 30 

    • 4 egg whites
    • 1/4 teaspoon salt
    • 200g caster sugar
    • 1/2 teaspoon vanilla extract

    1. Preheat the oven to 110 C / Gas 1/4. Line 2 baking trays with greaseproof paper.
    2. Beat the whites till they stand in soft peaks. Add salt and continue whisking. Gradually add sugar continue to beat till the mixture is stiff and glossy, about 6 to 7 minutes. Add vanilla extract.
    3. Place the mixture in a piping bag with a large round nozzle. Pipe small meringues on the baking plate, more or less 1.5 cm in diameter, and about 2cm space between them.
    4. Bake in the oven till they have dried but not browned, about 1 hour.
    5. Remove from oven and let cool. Place the meringues on a wire rack to let them cool completely. Serve plain or fill with dulce de leche.
