360g cooked quinoa
1 (400g) tin chickpeas, drained
500g cherry tomatoes, halved
1 cucumber, peeled and diced
1 green pepper, diced
1 red onion, finely chopped
1 small bunch fresh parsley, chopped
For the dressing
5 tablespoons olive oil
3 tablespoons lemon juice, freshly squeezed
salt and pepper, to taste

In a large salad bowl, mix cooked quinoa, chickpeas, cherry tomates, cucumber, green pepper, red oinion and parsley. Mix well.
In a separate bowl, mix all ingredients for the dressing and whisk until well combined. Drizzle over salad and toss to combine.
