Quinoa, chickpea, cucumber and tomato salad

    Love the amazing taste and nutritional qualities of quinoa? Try this delicious salad full of flavours from the quinoa, chickpeas, tomatoes and cucumbers, delicately seasoned with a simple lemon vinaigrette. Feta cheese would be a great addition as well.

    Serves: 4 

    • 360g cooked quinoa
    • 1 (400g) tin chickpeas, drained
    • 500g cherry tomatoes, halved
    • 1 cucumber, peeled and diced
    • 1 green pepper, diced
    • 1 red onion, finely chopped
    • 1 small bunch fresh parsley, chopped
    • For the dressing
    • 5 tablespoons olive oil
    • 3 tablespoons lemon juice, freshly squeezed
    • salt and pepper, to taste

    1. In a large salad bowl, mix cooked quinoa, chickpeas, cherry tomates, cucumber, green pepper, red oinion and parsley. Mix well.
    2. In a separate bowl, mix all ingredients for the dressing and whisk until well combined. Drizzle over salad and toss to combine.
