1 yellow onion, chopped
1 green pepper, cut in strips
1 tablespoon seeded and chopped fresh green chilli
330g frozen sweetcorn
1 teaspoon caster sugar
1 pinch cumin
salt and pepper, to taste
100g feta cheese, crumbled

In a medium saucepan, warm olive oil over medium heat. Add the chopped onion and cook and stir until tender and translucent. Add pepper and chilli and cook for another 5 minutes till tender.
Add sweetcorn to the saucepan and season with sugar, cumin, salt and pepper. Cook for another 2 minutes, stirring frequently until the sweetcorn is hot through. Pour into a salad bowl and sprinkle with feta cheese. Serve warm.
