Potato courgette gratin

    This vegetable gratin is super easy and is the easy side dish for any meat or fish, or as a vegetarian main course. If using organic veg no need to peel them.

    • 1 to 2 medium courgette
    • 2 medium potatoes
    • 30g butter, diced
    • 120ml doubl cream
    • 60g grated Gruyere cheese


    1. Preheat the oven to 180 C / Gas 4.
    2. Thinly slice the courgette and potato using a mandoline.
    3. Spray a baking dish with vegetable oil. Place a layer of potato slices on the bottom and scatter butter dots on top. Cover with a layer of zucchini. Repeat the layers, alternating the vegetables, with bits of butter.
    4. Pour cream on top and sprinkle with the grated cheese.
    5. Bake in the preheated oven till golden brown, about 20 to 30 minutes.
