Chimicurri is an uncooked herb sauce for steaks that takes only a few minutes to make but it should marinate for a few hours in the fridge to develop its full flavour. The amounts can easily be doubled, tripled or quadrupled.

1/2 tablespoon minced fresh basil
1/4 teaspoon minced spring onions
1/2 teaspoon minced green pepper
1/2 tablespoon minced fresh oregano
3 tablespoons olive oil
3 tablespoons white wine vinegar
salt and pepper

Mix all ingredients in a bowl and refrigerate for at least 3 hours. Ideally, prepare chimichurri the day before.
