Strawberry rhubarb ice cream sundae

    The popular combination of rhubarb and strawberries goes perfectly as an ice cream topping. It is prepared in minutes and could not be simpler.

    Serves: 6 

    • 3 stalks rhubarb, chopped
    • 5 tablespoons caster sugar
    • 300g strawberries, hulled and sliced
    • 250g de jamón crudo
    • 1 lemon, juiced
    • vanilla ice cream

    1. In a saucepan over medium heat, mix the rhubarb with the sugar and lemon juice and cook till the rhubarb falls apart, about 10 minutes. Add the strawberries and cook 5 further minutes whilst stirring.
    2. Let cool completely or serve warm over ice cream.
