60g fresh baby spinach
150g cherry tomatoes

2 hard boiled eggs, chopped

4 tablespoons olive oil
salt and pepper, to taste
50g Gouda cheese, grated

Mix lettuce pieces and spinach and place in a bowl or platter. Mix tomatoes, carrots and hard boiled eggs in a bowl. Spread over green leaves.
In a separate bowl, mix all ingredients for the dressing and whisk until well combined. Sprinkle dressing over salad. Sprinkle grated Gouda cheese on top and serve.
