    About this recipe: A pizza dough that's ideal for those who need to follow a gluten free or yeast free diet. Simply mix the ingredients in a bowl and fry the pizza base in a pan until golden brown, just the same way you would cook pancakes. Top with pizza sauce, mozzarella cheese and your favourite toppings.

    Ingredients
    Makes: 1 pizza

    • 2 tablespoons almond flour (or ground almonds)
    • 2 tablespoons extra virgin olive oil
    • 2 egg whites or 80ml pasteurized egg whites
    • salt, to taste
    • pizza sauce, to taste
    • light mozzarella cheese, to taste (optional)

    Method

    1. In a bowl, mix almond flour, oil, salt and egg whites to make a thick batter.
    2. Heat a non-stick pan or flat griddle over medium heat. Pour on the batter and cook for a few minutes on both sides until golden brown. Remove from heat.
    3. Preheat the oven to 180 C / Gas 4. Line a pizza baking dish with some parchment paper.
    4. Transfer the pizza base onto the baking dish; add tomato sauce and mozzarella cheese, if using.
    5. Bake in the preheated oven until the mozzarella has melted. Serve.
