Makes: 1 pizza
2 tablespoons almond flour (or ground almonds)
2 tablespoons extra virgin olive oil
2 egg whites or 80ml pasteurized egg whites
salt, to taste
pizza sauce, to taste
light mozzarella cheese, to taste (optional)

In a bowl, mix almond flour, oil, salt and egg whites to make a thick batter.
Heat a non-stick pan or flat griddle over medium heat. Pour on the batter and cook for a few minutes on both sides until golden brown. Remove from heat.
Preheat the oven to 180 C / Gas 4. Line a pizza baking dish with some parchment paper.
Transfer the pizza base onto the baking dish; add tomato sauce and mozzarella cheese, if using.
Bake in the preheated oven until the mozzarella has melted. Serve.
