80g granulated sugar
1 pinch salt
150g fresh ricotta cheese
1 or 2 drops rum extract or rum flavouring
180g plain flour
8g baking powder
20g cocoa powder
sunflower oil for deep frying
icing or granulated sugar for dusting

In a bowl, beat egg, sugar and salt together until pale and frothy. Add ricotta cheese and rum flavouring; stir well.
Sift the plain flour, cocoa powder and baking powder into a bowl; stir into the wet mixture using a spatula or wooden spoon first, then mix with your hands to create a soft dough. Transfer onto a clean working surface.
Divide the dough in half. Roll out each half, about 1/2cm thick.
Use a biscuit or cookie cutter to stamp out heart shapes from the dough. Gather up leftover dough and repeat.
Heat sunflower oil in a deep saucepan or wok until it reaches 190 C. Cook the hearts, a few at a time, flipping them over at least once, until browned and crisp. Remove with a slotted spoon and drain on kitchen paper.
Transfer to a bowl and dust with icing sugar or granulated sugar; serve while still warm.
