Chocolate and ricotta heart shaped fritters

    These delicious chocolate fritters are perfect for Valentine's day, Mother's day or any special occasion. Ricotta cheese adds a lovely taste and also makes the doughnuts taste nice and light.

    Serves: 4 

    • 1 egg
    • 80g granulated sugar
    • 1 pinch salt
    • 150g fresh ricotta cheese
    • 1 or 2 drops rum extract or rum flavouring
    • 180g plain flour
    • 8g baking powder
    • 20g cocoa powder
    • sunflower oil for deep frying
    • icing or granulated sugar for dusting

    1. In a bowl, beat egg, sugar and salt together until pale and frothy. Add ricotta cheese and rum flavouring; stir well.
    2. Sift the plain flour, cocoa powder and baking powder into a bowl; stir into the wet mixture using a spatula or wooden spoon first, then mix with your hands to create a soft dough. Transfer onto a clean working surface.
    3. Divide the dough in half. Roll out each half, about 1/2cm thick.
    4. Use a biscuit or cookie cutter to stamp out heart shapes from the dough. Gather up leftover dough and repeat.
    5. Heat sunflower oil in a deep saucepan or wok until it reaches 190 C. Cook the hearts, a few at a time, flipping them over at least once, until browned and crisp. Remove with a slotted spoon and drain on kitchen paper.
    6. Transfer to a bowl and dust with icing sugar or granulated sugar; serve while still warm.
