Chocolate cantucci

    Cantucci are typical Tuscan biscuits, traditionally served with vin santo or red wine. They are also known as "Italian biscotti" because they are twice (bis) cooked (cotti). This version with dark chocolate is even yummier than the original!

    Serves: 4 

    • 250g caster sugar
    • 3 eggs
    • 1 teaspoon vanilla extract
    • 300g plain flour
    • 2 teaspoons baking powder
    • 150g dark chocolate, cut in small chunks

    1. Preheat the oven to 170 C / Gas 3. Line a baking tray with parchment.
    2. In a large bowl, beat the eggs with sugar and vanilla until frothy.
    3. Add flour and baking powder. Mix well.
    4. Incorporate the chocolate. You'll obtain a sticky dough.
    5. Halve the dough into two equal portions and with each piece form a long and thick log. Transfer both pieces to the prepared tray, a few centimetres apart.
    6. Bake in the preheated oven for 15 to 20 minutes.
    7. Remove from oven and slice each log in a about 2cm thick pieces, to make the classic cantucci shape.
    8. Return to the oven, turn off the heat, then remove after 30 minutes. Let cool at room temperature before serving.

    This is the first time I’ve made a biscotti where I didn’t bake it twice, just put it in the shut-off oven for 30 minutes. I was worried that it would not have that crisp crunch that is so desirable in biscotti, but it did, wonderfully so. It was excellent.
