750g ricotta cheese
100g caster sugar
1/2 teaspoon lemon extact
2 tablespoons chocolate chips
40 mini cannoli or 20 big cannoli shells

In a bowl place the ricotta, sugar and lemon extract. Stir with a fork till smooth. Fold in the chocolate chips. Transfer the mixture to a pastry bag.
Right before serving, fill each shell with the ricotta mixture. Sprinkle with icing sugar and serve.
