Quick ricotta cannoli

    With storebought cannoli shells, making this classic Italian dessert is easy and quick. Preparing the filling requires no more than 5 minutes. Make sure to fill the shells just before serving or they will become soggy.

    Makes: 40 mini cannoli

    • 750g ricotta cheese
    • 100g caster sugar
    • 1/2 teaspoon lemon extact
    • 2 tablespoons chocolate chips
    • 40 mini cannoli or 20 big cannoli shells
    • icing sugar, as needed

    1. In a bowl place the ricotta, sugar and lemon extract. Stir with a fork till smooth. Fold in the chocolate chips. Transfer the mixture to a pastry bag.
    2. Right before serving, fill each shell with the ricotta mixture. Sprinkle with icing sugar and serve.
