Roll out the fondant icing then sprinkle the peppermint extract all over, try to distribute it as evenly as possible, smearing with your fingertips if needed. Knead gently to ensure that the peppermint is well distributed.
Cut into whichever shapes you would like them to be (circles, etc). Place on a tray lined with baking parchment and leave until hardish but still slightly soft, and enjoy!! (You could try putting them in the fridge for a couple of hours).
You could try food colouring your creams (try using pale colours), to make a wider range of deliciousness! Or, you could even dip them in chocolate, ooh, yummy!
