Cut the potatoes into chunky wedges and put in a mixing bowl. Add oil and spices and mix it all together, for better flavour I usually leave for an hour to soak it all in but can be used straight away if needed. Spread out in a single layer on a baking tray.
Bake in the preheated oven for 30 to 40 minutes until tender and golden brown. Remove from the oven and serve.
