About this recipe: I made this to use up some oddments of jam (strawberry and damson jelly) and it is now a favourite. Very adaptable as you can use whichever jams or preserves are available. It is made with just a very few store cupboard ingredients, but tastes a real treat. The higher the percentage of butter to margarine, the richer the flavour. I use half butter and half margarine.

Serves: 10 

  • 100g granulated sugar
  • 250g butter or margarine (or combination of both)
  • 350g plain flour
  • 200g jam or preserve of your choice

  1. Preheat the oven to 160 C / Gas 2/3. Line a 30x20x5cm baking tray with baking parchment.
  2. Cream together the sugar and butter or margarine until light and fluffy. Mix in flour, the mix will be quite sticky.
  3. Put two thirds of the mixture in the tin and press down firmly with fingers, well into the corners, make it level. Spread your jam over the base then with the remaining third of your mix, crumble lightly over the top. Don't worry if there are gaps.
  4. Bake for 30 to 40 minutes until golden brown. Remove from the oven and leave to cool in the tin and then cut into slices or squares and serve.
