About this recipe: Easy microwave recipe for blackcurrant and Pimm's® jam. Can be used for strawberries, blackberries or mixed fruit combination. Really easy recipe and great with a nice scone for the summer.

Makes: 2 (450g) jars blackcurrant jam

  • 500g blackcurrants
  • 400g jam sugar
  • 4 tablespoons Pimm's®
  • 1 dash vanilla extract (optional)

  1. Wash the fruit, removing any stalks and place in a microwave-safe bowl. Mix in the sugar, Pimm's® and vanilla if using. Loosely cover, a microwave plate cover is ideal, this to avoid splashing the inside of your microwave.
  2. Cook on full power for 2 minutes then take out and stir. Place back in the microwave and cook for a further 3 minutes on high power. Remove and stir then return for a final 2 minutes on high.
  3. Test if the setting point has been reached by placing a small drop of the jam on a cold plate. If it wrinkles when you push it with your finger, it is ready. If it doesn't, it needs another couple of minutes in the microwave.
  4. Once the setting point is reached, pour or spoon jam into prepared sterilised jars, leaving a couple cm headroom. Seal and leave to cool; when cool enough, put in the fridge to set. Great on scones or in a Victoria sponge. Enjoy!
