I was trying to find a chocolate pancake recipe without eggs. I couldn't find one so I just winged it and made one up. This recipe makes delicious, chocolaty pancakes which will fill anyone's chocolate cravings!
Mix together all of the dry ingredients in a bowl. In a separate bowl (or jug), mix together the wet ingredients, except the 1 knob of butter. Combine both mixtures together and stir until smooth. If too thin, add more plain flour.
Melt a knob of butter in a frying pan over a medium low heat. Pour in a ladle full of pancake mixture into the frying pan and tilt the pan around to coat the base evenly with the mixture. Cook for 1 to 2 minutes before flipping and cooking the other side for 1 to 2 minutes. Repeat until the mixture is used up. Serve on warmed plates with your favourite toppings.
