    About this recipe: A tasty vegetarian curry that's great for the slow cooker. Serve over rice or with some naan bread on the side.

    Ingredients
    Serves: 4 

    • 250g lentils of your choice
    • 2 onions, chopped
    • 4 cloves garlic, crushed
    • 200g chopped fresh tomatoes
    • 400g carrots, cut into batons
    • 2 tablespoons medium curry powder
    • 750ml vegetable stock, warmed

    Method

    1. Preheat the slow cooker to Low setting.
    2. Place the lentils in a colander and rinse under the cold tap. Drain and transfer to the slow cooker. Add all of the remaining ingredients and give a good stir.
    3. Cover and cook on Low for 6 hours, stirring occasionally, until the lentils are tender. Serve in warmed bowls with naan bread.
