Preheat the grill to medium heat.
Place the halved tomato cut side up in a heatproof dish. Sprinkle with cumin and rub it into the flesh of each half. Add dried sweet basil then place the sliced or grated cheese on top.
Place the tomatoes under the grill and cook until tender and the cheese has melted, about 8 minutes, lowering the heat if necessary. Remove from the grill and serve with a sprig of parsley on top - dresses it up nicely!
Adding a thin slice of onion under the cheese is delicious and a bit different, but not always appreciated by breakfast guests!
