Fiery rocky mountain oysters

    Sheep's testes have been eaten as delicacies all over the world for hundreds of years. It is full of testosterone and minerals, and as such — in combination with special spices — is claimed to be a strong aphrodisiac.

    Serves: 3 

    • For the testicles
    • 2 to 3 pairs lamb or sheep testicles
    • 1 teaspoon ground pepper
    • 1 pinch ground cloves
    • 1 teaspoon ground cumin
    • 1/2 teaspoon ground coriander
    • 1 teaspoon salt
    • 1/2 teaspoon mild red chilli powder
    • 1 teaspoon ginger paste
    • 1 teaspoon garlic paste
    • 1 tablespoon chopped fresh coriander
    • 2 tablespoons vegetable oil
    • For the tiger's cream
    • 100g mayonnaise
    • 1 teaspoon That Hungry Chef smokey chilli relish
    • zest and juice of 1 lime
    • 1 tablespoon chopped fresh coriander
    • 1 teaspoon garlic paste
    • For the coleslaw
    • 1/4 red cabbage
    • 1 carrot
    • 1/2 cucumber
    • 1 handful rocket leaves
    • 2 tablespoons chopped fresh mint
    • 2 tablespoons chopped fresh coriander
    • juice of 1 lime
    • 1 teaspoon salt
    • 1/2 teaspoon caster sugar
    • 2 tablespoons mixed seeds, toasted
    • 2 tablespoons extra virgin olive oil
    • 1 tablespoon chopped root ginger
    • For the batter
    • 245ml buttermilk
    • 1 tablespoon caster sugar
    • 1 teaspoon baking powder
    • 1 teaspoon salt
    • 135g plain flour

      For the testicles:

    1. For the testicles, simply remove any excess membrane and slice them into pieces a 1/2cm (1/4") thick. Mix the sliced testicles with the rest of the ingredients in that section and marinate for 30 minutes.

    3. In the meantime, make the cream by simply blending all the ingredients and keep in a bowl to serve.

    5. For the slaw, grate the red cabbage and carrot in a large bowl. Deseed the cucumber and grate that into the mix as well. Add the rest of the ingredients and mix well.
    6. For the batter:

    7. To make the batter, just blend all the ingredients (except the flour) and set aside. Toss the marinated pieces of testicle in some plain flour and dip them into the batter, making sure to coat them evenly all over. To cook the testicles, heat enough oil in a deep pan for frying. Carefully drop the pieces into the hot oil (be careful with your fingers!) and cook on medium flame until they’re golden brown all over and floating on top.
    8. To serve, first put a couple spoons of the coleslaw on the plate, followed by 3 to 5 pieces of fried testicle. Drizzle the tiger’s cream over the top and get stuck in!
