Tasty chocolate cookies

    The outside of these cookies taste like cocoa and is a bit harsh, but the inside is soft and sweet.

    Makes: 20 cookies

    • 150g butter
    • 1 pinch salt
    • 75g icing sugar
    • 1 egg
    • 40 to 50g cocoa powder
    • 200g plain flour

    1. Melt the butter in a saucepan over a medium heat then pour into a bowl and mix together with the remaining ingredients. Place in the fridge for 2 hours.
    2. Preheat the oven to 190 C / Gas 5. Grease a baking tray.
    3. When you remove the dough from the refrigerator it is usually glued to the bowl, so scrape it loose with a spoon.
    4. Turn out onto a lightly floured surface and roll out to a thickness of about 1cm. Cut into shapes (I often cut squares).
    5. Bake in the preheated oven for 5 to 10 minutes until firm. Remove the cookies from the oven and allow to cool before serving.
