Plumsie's easy-peasy cheesecake

This is a no bake cheesecake. Add whatever topping you like such as fresh strawberries or tinned mandarin oranges.

- 15 digestive biscuits
- 1 tablespoon butter
- 2 tablespoons caster sugar
- 1 (280g) tub cream cheese
- 60ml milk
- 2 packets Bird's Dream Topping®

- Place the biscuits into a sealable freezer bag and crush into crumbs. Into a saucepan over a medium heat melt the butter and sugar. Once melted, switch off the heat add the crushed biscuits and stir to coat. Press into the base of a lightly greased small loose bottomed cake tin. Place in the fridge to chill.
- Combine the cream cheese, milk and dream topping in a bowl and whisk until smooth and creamy. Remove the base from the fridge and spoon the cream cheese mixture on top.
- Return to the fridge to chill for at least an hour. Decorate as desired, I like fresh strawberries or tinned mandarins, and serve! Easy as 1-2-3!
