Perfect pepperoni penne

    This recipe is jam packed with flavour but so simple to create. Serve with some crusty garlic bread on the side.

    Serves: 6 

    • 2 tablespoons olive oil
    • 8 bacon rashers, sliced
    • 1 large onion, chopped
    • 2 garlic cloves, crushed
    • 3 small red chillies, seeded and sliced
    • 560g passata
    • 2 tablespoons tomato puree
    • 100g sliced pepperoni
    • 500g penne pasta
    • 2 tablespoons chopped fresh basil
    • 2 tablespoons chopped fresh flat-leaf parsley

    1. Heat the oil in a frying pan over a medium heat. Add the bacon, onion, garlic and chilli and cook, stirring occasionally, for 5 minutes or until the onion is soft.
    2. Add the passata, tomato puree and pepperoni. Bring to the boil, then simmer, covered, for about 20 minutes.
    3. Meanwhile, cook the pasta in a large pan of boiling salted water following packet directions until al dente, then drain. Stir the herbs into the tomato sauce. Toss with the pasta and serve sprinkled with cheese and garlic bread on the side!
