Heat half of the butter in frying pan over a medium heat. Remove crusts from bread, cut bread into 1cm cubes and stir-fry in butter till golden and crispy, remove from pan and dry on kitchen paper.
Heat one tablespoon of oil in same pan, chop onion not too finely, add to pan and cook for 4 to 5 minutes till golden.
Break eggs in a bowl and add a splash of water and salt and pepper. Mix with a fork but do not beat as you need some texture in the eggs.
When the onions are cooked drain off as much oil as possible and add egg mixture to pan, cook over a medium heat stirring all the while.
When eggs are cooked to your liking add the remaining butter to the mix and stir till melted.
Add fried bread cubes to pan and mix well to heat through. Serve immediately.
Tip
As the bread is stir-fried, this is easiest made in a medium-sized saucepan.
