Basic gingerbread men

    A simple recipe for gingerbread men biscuits, using just a handful of ingredients that you probably already have in the house. If desired, you can add additional spice, such as a teaspoon of cinnamon or a pinch or two of cloves.

    Serves: 8 

    • 125g butter
    • 110g soft brown sugar
    • 1 egg
    • 260g plain flour
    • 1/2 teaspoon bicarbonate of soda
    • 2 teaspoons ground ginger

    1. Cream butter and sugar until well combined, then mix in the egg. Sift in flour, bicarb and ginger; mix well.
    2. Knead dough on a lightly floured surface adding more flour if necessary. Roll out dough thinly then use a shaped cutter to create your gingerbread men. Place the men on a lightly greased tray.
    3. Bake in a preheated 180 C / Gas 4 oven for 15 minutes. Cool on a wire rack before decorating.


    Biscuit and cookie dough that is chilled before baking will hold its shape better. If you chill this gingerbread dough before rolling and cutting, the biscuits will have sharper, cleaner edges.

    I didn't really rate these, i'm sorry, as they did NOT TASTE LIKE GINGERBREAD, although i did decorate them and have included some of my pictures of them, VERY DRY INDEED and i even added extra spice but you need golden syrup for real gingerbread but okay i guess for some one who doesn't really like strong gingerbread  -  26 Oct 2016


    I made this for my children's school party and it was a big hit. Been asked for the recipe twice already by the teachers. I actually prefer it to the traditional one with golden syrup...more crunchy. I didn't have brown sugar so added 1 tablespoon of date syrup to white sugar instead. I also added the recommended 1 teaspoon of cinnamon which made them more tasty.  -  18 Apr 2018
