Best ever banana bread loaf cake

    I kid you not, this is the best banana bread recipe. Really moist, not too dense, with a subtle banana flavour. I like to add dark chocolate chips for an extra decadent treat, but this recipe is great for using up leftover ingredients in your fridge, as well as delivering a healthier version of this favourite recipe.

    Serves: 10 

    • 60g butter or soft spread
    • 150g equivalent sugar substitute (e.g. stevia)
    • 2 large bananas
    • 2 eggs
    • 4 tablespoons natural yoghurt
    • 3 tablespoons apple puree
    • 1 teaspoon vanilla extract
    • 200g wholemeal flour
    • 1/2 teaspoon bicarbonate of soda
    • 1 teaspoon baking powder
    • 100g dark chocolate chips

    1. Preheat the oven to 160 C / Gas 2/3. Grease a 900g loaf tin and line with baking parchment.
    2. In a bowl, cream the butter and the sugar together until pale and fluffy.
    3. In a separate bowl, mash the bananas with a fork. Beat in the 2 eggs, yoghurt, apple puree and vanilla extract until combined.
    4. Add the banana mixture to the butter and sugar, and combine. Stir in the flour, bicarb, and baking powder and fold in until just together; add in the chocolate chunks (save a few back to press in on top). Spoon the mixture into the preprepared baking tin then top with the remaining chocolate chips.
    5. Bake in the preheated for 1 hour or until risen and firm and a skewer inserted into the centre comes out clean. Remove from the oven and allow to cool before slicing and serving.

    35 mins at 170 still watery in the middle outside cooked..not happy..too watery I'm gunna use baking powder and a drop of milk next time  -  20 Feb 2017
