Citrus tandoori marinated pimento olives

    Serves: 4 

    • 25g garam masala powder
    • 1/2 to 1 teaspoon lemon zest
    • 20g chilli powder
    • 20g salt
    • freshly ground pepper, to taste
    • 1 tablespoon chopped fresh mint
    • 100g thick yoghurt
    • 15 Spanish pimento olives
    • lemon juice, to taste
    • 2 teaspoons chopped fresh coriander
    • 2 teaspoons tandoori powder

    1. Preheat the oven to 200 C / Gas 6.
    2. Combine the garam masala, lemon zest, chilli powder, salt, pepper and mint and mix together to prepare the marinade. Add the yoghurt, taste test and adjust salt if necessary. Coat the olives in the marinade and transfer to an ovenproof baking dish.
    3. Bake in the oven (or tandoor oven at a high temperature) for 6 to 8 minutes until the olives are tender. Remove from the oven and add a little lemon juice to taste; garnish with chopped fresh coriander and a pinch of tandoori powder and serve.
