    About this recipe: A new twist on an old classic, and a great way to use up those extra courgettes from your garden.

    Serves: 8 

    • 250g grated or spiralled courgette
    • 100g grated or shredded carrot
    • 3 tablespoons light mayonnaise
    • 1 teaspoon sugar, or to taste
    • salt and freshly ground black pepper to taste

    1. Place courgette strands in a colander and let drain thoroughly, about 30 minutes. Toss with grated carrot in a large salad bowl; stir in mayonnaise and sugar.
    2. Chill the coleslaw for 1 hour to blend flavours; stir again, and season with salt and black pepper.
