    About this recipe: My wife and I are on the Slimming World diet. We were making meatballs and needed a sauce, so I grabbed what ingredients I had and made this sauce.

    Ingredients
    Serves: 3 

    • low calorie cooking spray
    • 1 onion, chopped
    • 1 garlic clove, finely chopped
    • 1 pepper, chopped
    • 1 chilli pepper, finely chopped (optional to give it some spice!)
    • 1 (400g) tin chopped tomatoes
    • 1/2 to 1 teaspoon fresh chopped basil
    • 1/2 to 1 teaspoon fresh chopped oregano
    • mixed dried herbs, to taste
    • Worcestershire sauce, to taste
    • 1 to 2 teaspoons tomato puree
    • 1/2 tablespoon caster sugar
    • salt and black pepper, to taste
    • sprig fresh basil, to serve

    Method

    1. Spray a saucepan over a medium heat with low calorie cooking spray. Add the onion and garlic and cook and stir until soft. Add the pepper (and chilli if using) and cook for about 2 minutes.
    2. Empty the contents of the tin of tomatoes into the saucepan followed by the herbs, Worcestershire sauce, tomato puree, sugar and seasoning and give a good stir.
    3. Bring to a simmer and add a little hot water, if desired, to reach the preferred consistency. Allow to simmer for at least 8 to 10 minutes before using over pasta or on pizza.

    Tip

    This sauce takes about 15 mins to make and if you are using pasta, this contains no fat.

    Substitutions

    If you do not have fresh herbs you can substitute with dried. The sugar can be replaced with low calorie sweetener if required.
