Corned beef burgers

    This recipe is quick, simple and super tasty! I made it with ingredients that I just happened to have in the fridge/cupboard. Feel free to add your own twist! Serve with blue cheese sauce or herb mayonnaise. Makes 2 large burgers.

    Makes: 2 large burgers

    • 1 clove garlic, roughly chopped
    • 1 spring onion, roughly chopped
    • 1/4 to 1/2 red chilli, seeded and roughly chopped
    • 1 slice bread
    • 1 pinch ground black pepper
    • 1 (450g) tin corned beef
    • 1 small egg
    • 2 tablespoons vegetable oil

    1. Combine the garlic, spring onion and chilli in a food processor and process until finely chopped. Tear the bread into chunks, add to the food processor and process to crumbs. Add the black pepper and briefly process again. Add the corned beef and the egg and run the food processor to mix everything together.
    2. Heat the vegetable oil in a non-stick frying pan. Divide the corned beef mixture into two thick patties and fry over a medium heat for around 5 minutes each side or until dark brown in colour. Remove from the pan and serve in buns with toppings of your choice.


    I use a food processor to chop and combine the ingredients, but if you don't have a food processor just chop everything finely by hand and combine the ingredients with a fork in a bowl.
