Chicken and pea soup

    A chunky, filling soup with chicken, potatoes and garden peas. Both adults and kids love this dish. It's also a very easy way to use up leftover roast chicken.

    Serves: 4 

    • 2 tablespoons olive oil
    • 1 onion, finely diced
    • 2 chicken breasts, sliced into small chunks
    • 4 potatoes, sliced into cubes
    • salt and freshly ground black pepper
    • 400g green peas, fresh or frozen
    • fresh dill, to serve

    1. Heat olive oil in a large pan over medium heat. Add onion and cook for 5 minutes, or until softened and golden in colour. Stir in the chicken pieces and cook for 3 -5 minutes or until browned.
    2. Add potatoes and about 1 1/2 litres water. Season with salt and pepper; bring to the boil and then simmer for 15 minutes.
    3. Stir in peas and cook for another 5 to 10 minutes, checking that the potatoes have cooked before serving.
    4. Ladle into bowls and garnish with freshly chopped dill.
